A QUICK AND EASY GOURMET RAW FOOD MEAL
by Mark Allen Ament This salad, main dish and dessert can all be made in about an hour. A satisfying and great tasting raw food meal. Enjoy and live long!
SALAD: BABY GREENS WITH BASIL VINEGARETTE
Start with a mix of baby greens
Slice thinly 5-6 radishes
Add 2-3 sliced tomatoes
Add 2 stalks thinly sliced celery
Add 1-2 grated carrots
Dressing:
Blend until smooth
1/4 cup (50ml) flax or olive or hemp oil
1/8 cup (30ml) balsamic vinegar
1/2 cup (120gm) fresh basil
1 clove garlic
2 T. (20ml) agave sweetener
1 t.(5ml) lemon juice
1/4 (50gm) cup pine nuts
Sprinkle salad with ground flax seeds
MAIN DISH: CASHEW CILANTRO PATE
Blend in a food processor until smooth
1/4 cup (50gm) cashews (soaked 1-2 hours)
1/4 cup (50gm) pumpkin seeds (soaked 2 hours)
1 small clove garlic
2 medium tomatoes
1/2 small cucumber
1 cup fresh cilantro
1/2 medium peeled apple
2 T. (20ml) Lemon juice
Celtic sea salt to taste
Add to blended mixture
2 medium diced tomatoes
Chopped parsley to garnish
Serve wrapped in cabbage leaves or nori sheets
DESSERT: CHOCOLATE MINT PUDDING
In a blender mix until smooth:
4 medium-size avocados
3 T. (30gm) carob powder
1 T. (10gm) ground raw cacao
1 T. ( 10ml) agave syrup
1/2 drop peppermint essential oil (optional) Garnish with a fresh mint leaf. ©2006
